Almond-Milk Rice Pudding

When it comes to making rice pudding, it’s similar to risotto in the sense that it’s absolutely delicious but slightly high maintenance. With a little patience, trust me it’s worth it, this pudding is well worth the wait.

1 cup long grain white rice

1/4 cup granulated sugar

1/2 teaspoon cinnamon

5 – 7 cups unsweetened almond milk, added in increments

Method:

1.   In a large saucepan over medium heat, add rice, sugar, cinnamon, and 2 cups almonds milk.

2.   Bring to a boil, reduce heat to medium – low and while stirring, allow to cook until milk has been incorporated, approximately 7 minutes.

3.   Add 1 cup almond milk, cook while whisking and until milk is incorporated before adding an additional 1 cup. Continue this process until rice is al dente, approximately 30 minutes. If a thinner consistency is desired, add more milk until desired consistency.

4.   Allow to cool then serve with additional almond milk and a light dusting of cinnamon, if desired.

 

Kitchen Note:  Sushi rice can also be used but keep in mind cooking time may vary. Serving with fresh fruit or even chutney on top, is another great way to take this to the next level.
