Whether on vacation to the tropics or sitting on your patio, pina coladas are an excellent and festive salute to warm weather, summer vacation or just because, well, you can!

1 cup pineapple juice, best quality possible
1/4 cup coconut milk or cream (preferred if you can find) – see kitchen note
1 tablespoon lime juice, juice from 1 lime
2 tablespoons agave, plus more if desired
rum, if using, as desired
1. In a blender, add pineapple juice, coconut milk or cream, lime juice, agave and rum, if using. Fill with 2 – 3 cups ice and blend until smooth. Adjust with additional agave for added sweetness, pineapple juice to thin and ice to thicken consistency.
Kitchen Note: Coconut cream provides a richer consistency than coconut milk and can usually be found in the liquor section of most grocery stores.
