When I think of coconut smoothies, I often think to an epic summer I had with my family in Key West. It was hotter than we expected and the only thing that cooled us down were dips in the ocean and coconut smoothies. This version is super simple to make while utterly refreshing.

1, 10.5-ounce can chilled coconut water
1 cup frozen pineapple, cubed
1/2 cup 2% Greek yogurt
1/4 cup unsweetened low-fat coconut milk
1 cup crushed ice, optional
1. In a blender, add coconut water, pineapple, Greek yogurt, and coconut milk. Blend on low until “running” then high until smooth. If a thicker or icier consistency is desired add ice starting with 1 cup.
2. Serve as is or with a pineapple wedge to garnish.
Kitchen Note: To make this alcoholic, consider adding a coconut or fruit flavored rum when blending.
