Classic Lemonade

Nothing says summer better than an ice-cold freshly made lemonade. Citric acid is my secret – however not so secret anymore – ingredient which takes an ordinary “classic” to extraordinary levels!

 

Yield: 4 quarts

Preparation time: 10 minutes

Cook Time: 5 minutes

5 cups water

1 cup granulated sugar

1 cup freshly squeezed lemon juice, juice from approximately 5 lemons

1 teaspoon citric acid – See kitchen note

Method:

1.   In a medium size pot over medium heat, add water and sugar. While occasionally stirring, cook until sugar has dissolved, approximately 4 minutes.

2.   Remove from heat, add lemon juice and citric acid mixing until combined.

3.   Allow to cool, then serve over ice. If too sugary or tart, adjust with added lemon juice or simple syrup until desired taste.

 

Kitchen Note: Citric acid can be hard to find but makes all the difference! Try looking at your local cooking store, like Sur La Table, online or Surfas if in California. If you can’t get your hands on citric acid, simply omit it in the recipe.
