Barley Breakfast Porridge
Many of us are looking for ways to get more grains in our diet, and this recipe is in tribute to just that! Instead of making oatmeal in the morning, try adding barley to your breakfast cereal. It’s fluffy, full of nutrients and different than the standard oats. So go ahead, take a chance and add barley instead!

Cook Time: 40 minutes
4 cups 1% milk (or whole milk for more “richness”), plus more if needed
1 1/2 cups pearled barley, rinsed
1 teaspoon kosher salt
Optional Garnish:
toasted almonds – see kitchen note
fresh fruit – see kitchen note
dried fruit – see kitchen note
Method:
1. In a medium size saucepan over medium heat, add milk, barley and salt. While occasionally stirring, bring to a boil, reduce to simmer, cover and allow to cook until barley is cooked and texture resembles oatmeal, approximately 35 – 40 minutes. If more moisture is needed before barley is fully cooked, add additional heated milk.
2. Remove from heat, fluff with a fork and serve with additional milk if desired.
Kitchen Note: Try topping your breakfast porridge with toasted nuts, like almonds, and fresh or dried fruit.
